Stove Ovens & Wall Ovens
Most controls for todays ovens, whether they are stove or wall, are controlled electronically with a digital display to show the status. Very minor changes have taken place in the oven besides the electronic control. Some brands now come with hidden bake elements, which aid in the clean-up process. Other brands offer multi element broilers, while others offer quick pre-heat options. All brands now offer convection cooking and another option that is starting to grow is the dual fuel stove.
Convection cooking adds another smaller element and a fan to the back wall of the oven cavity. With this fan and additional element, your oven cavity heats faster, and the heat is more equal throughout the cavity, no more cold spots. Convection cooking heats with that back fan always going, so your heat is always circulating.
This usually lets you cook at lower temperatures and faster cook times. Most ovens will automatically compensate cooking temperatures and times when you program the convection mode. Reading the owner’s manual will tell you how. Convection cooking is also available on gas models.
Dual fuel stove is a stove that cooks with both electricity and gas. The stove top is cooks with gas, while the oven will cook with electricity. Gas for a stove top or cooktop, like we said before, is the most prefered way of cooking.
Most people don’t care for oven cooking which they prefer, but some say that gas cooking in an oven does not dry your food out as much. The one downside to this, you must have both a 220 volt electric receptacle and a gas line going to your stove.

Gas ovens have hardly changed at all over the years. The biggest change is probably how the oven lights the burner. No more standing pilot flame or thermocouple is used anymore. Most use a square or spiral ignitor to light the burner, while a few uses a rapid spark system with a spark module. The most common way is an ignitor.
